Black & White Anniversary Cake

It was for me and my husband's second anniversary. This is a two tier cake top is a 6'doubled layer banana cake with butter cream filling, and the second cake is a 8" double layer red velvet cake with cream cheese filling. The outer shell is fondant part white and part black. The scrolls on the cake were done with royal icing once dry was painted with gold luster dust. For the black roses at the top of the cake...these were done two days in advance with gumpaste. The roses were created using small circle cookie cutters. I 1st take flower wire behind a small piece. Next, I get a small piece of gumpaste and shape it until it looks like a small cone. On the bottom of the cone I insert my wire with a little twist to hook it after 1st wetting the wire a dab. I now take this piece and put it straight into a block of Styrofoam I have on hand. Because gumpaste dries fast I had 2 pieces of plastic wrap waiting…I roll out my gumpaste almost thin enough to see through and then cut my circle putting them between my plastic wrap. Once this process is finish I start to attach my petals to my cone until I form my rose. Shape it and allow it to dry a day. Once dried I then take each of my roses across a stemming kettle. This will give your flower a beautiful shiny finish. Allow one additional day to dry after this process.
