Pretty Pink Ballerina Barbie Cake

I made this Ballerina Barbie Cake for my daughter’s 3rd birthday. I used 2 yellow cake mixes and baked for an hour and 20 minutes in a 3 quart steel bowl. I froze the cake, and then frosted it while frozen to avoid crumbs. I used the Wilton buttercream icing recipe, using real butter and real vanilla, and the rose pink coloring.

Then I used the #32 tip to make a large shell border around the base. There was a gap, due to the cake being a bit domed at the bottom, so the large shells worked well to fill it. I pushed a ballerina barbie through the top of the cake, and then I used the #16 tip to make small stars around Barbie’s waist. Then I bought some Wilton candy hearts and decorated the skirt. It was a big hit!
