Cute Homemade Buttercream Barbie Birthday Cake

My daughter loves Barbie, so I thought I would surprise her with this Barbie Birthday Cake for her 4th birthday. For the skirt, I used a Dolly Varden cake tin, and a round tin for the bottom as the Dolly tin on it’s own was not long enough to accommodate Barbie’s long legs. I used packet cake mixes from the supermarket. The top half was buttercake and the bottom round cake was chocolate.

Barbie was wrapped in plastic wrap to keep her and her dress clean. I dug out the middle of the cake when cooled with a knife and spoon and stuck Barbie in carefully to avoid the cake cracking. I filled the space around Barbie with bits of cake that I had dug out, so she would stand straight.

I used pre made fudge icing, and coloured it two different pinks. I smoothed the icing on with the edge of a knife and piped stars over Barbie’s chest. I stuck flowers made from icing around the bottom of the skirt and piped random stars all over.

I was very happy with how the cake turned out as this was my first attempt at such a cake and it was a big hit with my daughter and our guests.
