Beautiful Homemade Blue Barbie Birthday Cake with Royal Icing Roses

This Barbie Birthday Cake was my first time making this kind of cake. It took 3 days. The first day I used 2 boxes of brownie mix for the bottom 2 layers (9 3/4 inch). For the skirt I used pound cake, 2 boxes and a 6 inch pan. For the rounded top I used a ovenproof glass bowl.

On the second day I iced and stacked everything together. I put dowels in the middle of the bottom 2 layers, put 7 inch cake board on top. Wrapped cardboard center from paper towels with foil, made holes in the center of each layer of the skirt with it and stacked the skirt with cardboard rod in the center.

On the third day I decorated. I made fondant a few days before, colored it light blue. Covered Barbie and her skirt. Used spray-on food color for the bottom of the dress and bottom layer. Used butter cream and royal icing roses (made them a month before) to decorate bottom tier. Used silver food color to put dots on the dress. The idea is that Barbie’s dress matched my daughter’s dress. She was thrilled. My son’s first birthday cake is next.
