Cute Homemade Barbie Birthday Cake for a 5 Year Old

I made this Homemade Barbie Birthday Cake for my daughter who was turning 5. I want my kids to have cool cakes without it costing me a fortune to order them so I decided to try it myself. I am very pleased with how it came out.

The bottom portion is a half sheet cake. Three layers of chocolate cake with raspberry puree filling and covered is Swiss meringue and the flowers are done in traditional butter cream made to look like hydrangeas (shortening butter combo). I find it easier to make flowers with this than Swiss meringue.

The Barbie portion of the cake is done with a doll pick but the skirt is vanilla cake 2 layers I did in a metal mixing bowl – when done this way you have to bake at a lower temp and for longer and an 8″ cake pan and covered in Swiss meringue and the bodice of the dress is piped with a star tip. The cake also has basket weave piped around the cake in vanilla whip cream. The best tip I have for making this cake is make sure your cakes are cold it makes it much easier to handle them and move them around without having crumb issues.

I made this cake the night before her birthday I was finally finished at 2am as it was a surprise for my daughter and it sat in the fridge for 12hrs then I let it sit at room temp for about an hour as to let the buttercream soften a little. All of the cake was done from scratch nothing from a box.
