Cool Homemade Barbie Mermaid Cake

My gorgeous daughter Madelina requested a “mermaid party” for her 4th birthday. Every year we make the birthday cake together – which is just the standard “cake in a box” mix! I used 2 x standard Betty Crocker cake mixes for this cake. Bake in the oven as per the instructions. I used a Dolly Varden cake tin.

To assemble the cake, I cut a small hole in the top to insert the Barbie (legs removed!!) and then did a crumb coating and stuck the mermaid tail on at this stage – using tiny marshmallow which we ‘flattened’ and cut into smaller pieces to resemble scales. We then let this “set” in the fridge for an hour or so.

I really wanted the “ocean” to be an ombre effect – but unfortunately – it proved too hard when I was mixing all the blue food coloring into 3 different bowls. I didn’t get the desired affect, but I’m the only person who was aware of this. I just had blue food coloring everywhere and added the coloring it too quickly. I used brown sugar on the top to make ‘sand’ and then I piped the waves using butter cream in piping bags.

This was a little time consuming and certainly VERY messy – but worth every second when my daughter saw her cake and all her friends…. now they all want mermaid parties!
