Homemade Bunny Cake
This Bunny Cake is a birthday cake for my daughter’s best friend. The birthday girl had requested a colorful cake with bunnies and so I decided to add to the bunnies, carrots, flowers, ladybugs, leaves and mushrooms. The figurines are made with marshmallow fondant (which is melted marshmallow and icing sugar) the night before. I piped melted chocolate on fondant to make the Happy Birthday note on the cake.
The cake is a two layer 10 inch vanilla cake that I have made from scratch. I sandwiched and topped the vanilla layers with mixed berry yogurt mousse. To make mixed berry yogurt mousse, I pureed strawberries, black berries and raspberries and added the puree to yogurt, whipped cream and gelatin. The side of the cake is frosted with whipped cream then covered with chocolate flakes. The mousse cake needs to be refrigerated till served and as such I brought the fondant figurines separately and placed them on the cake prior to serving.
