Coolest Castle Birthday Cake

I made this cake for my niece’s fourth birthday. I took some ideas from this and other internet pages and I used some of the decorating techniques that I already knew.

The bottom cake is homemade carrot cake and the top is a yellow cake. Frosting and filling are cream cheese mixed with different food colors.

Since Cupcakes are uneven and difficult to frost with a smooth finish I used three store brand iced oatmeal cookies for the base of the towers.

I covered the ice cream cones with royal icing because it dries hard and is easy to make in advance and store. While the icing was still fresh, I rolled the towers in food glitter and placed a princess sticker on each tower. The window frames are also made of royal icing.

I also cut out a picture of Emi with her princess outfit, glued it to cardboard and placed her on top of the castle.
