Homemade Castle Birthday Cake
My 5 year old daughter, Annabel desperately wanted a princess Castle Birthday Cake, but I wasn't able to purchase any Disney Princess figurines in Australia. So we decided on a Fairy Princess cake instead!
A few days before the big day, I made the decorations out of ready to roll icing. I used a simple flower cutter that I bought from the cake shop, and added a white ball of icing at the centre. The leaf shapes were cut out of ready-rolled icing, and a sharp knife used to score on lines to make them look like real leaves.
I made two 25 cm cakes and sandwiched them together with butter icing. Four jam rolls were placed at the four corners of the cake. I then iced the whole thing with pink butter cream. I used plain waffle cones on top of the jam rolls to form turrets, and placed a circle of white chocolate buttons around the join. A row of mini marshmallows were placed around the top of the cake itself to look like battlements.
The windows and door are just melted white chocolate. I drew a picture of the shapes I wanted on baking paper, then piped the chocolate over them. The trees are upside-down icecream cones iced with green icing, with mint leaf lollies stuck on the top.
I was really happy with the result, and the whole thing probably took around three hours. Birthday girl was thrilled!
