Coolest Castle Birthday Cake

I wanted to make a special birthday cake for our soon-to-be 1 year old princess. After searching the net for ideas, I put this Castle Birthday Cake together. I wanted to try out using fondant, and used the marshmallow recipe. (1 bag mini marshmallows, 2lbs powdered sugar, 1/2c shortening, 4T water).

The base of the cake is two 13×9 chocolate cakes with chocolate frosting in between; the round cake is three layers with cream cheese frosting and raspberry jam, and the top one is yellow cake with chocolate frosting and is also the baby’s smash cake. The towers are stacks of ice cream cones nested inside each other, covered in fondant, and I brushed edible pearl dust in rose and silver.

The vines are buttercream, the flowers, windows etc. are all fondant. The tiara is one from the store, for the baby to wear, and there are supposed to be 4 flags on the cones, but one of our other children ate them. This cake was a lot of work but a lot of fun.
