Coolest Castle Cake

For my daughter’s 6th birthday I got adventurous and decided to do a 2 tiered cake. The base of the cake is a 12 x 18 sheet cake pan, it took 3 box cake mixes, marble.

I made a banana split cake that consisted of marble cake mix cooled and then i poured strawberry jello over it. I sliced the cake in half to make 2 layers and in between the layers was vanilla pudding mixed with cool-whip and topped with bananas.

I made homemade butter cream icing and along the way I learned a helpful tip. If you are doing a big batch of home made frosting and coloring it all one color add the color to the butter and shortening before you add the powdered sugar. Your color will come out more vibrant than if you add it later.

The castle is 2 6″ rounds stacked with whipped cream icing between the layers. I used regular and sugar ice cream cones for the castle effect. For the small turrets I cut the base of the cones off and for the large one I filled it with icing so that it would have some weight and not tip over.

I bought some princess figures for the cake and they came with extra characters which I also chose to use on the cake. It was a fun cake and i had a great time making it. I received many compliments about is especially from my daughter’s friends.
