Coolest Castle Cake

I made a 25cm vanilla sponge for the bottom and layered it with homemade vanilla buttercream and strawberry jam, four layers. The top tier of the castle cake is 15m chocolate fudge cake made with real 70% cocao solids chocolate.

I then crumb-coated both cakes with vanilla buttercream and put into fridge to set. I make my own fondant icing and to make the turrets I just add some gum tragacanth or Tylo powder so that it will set hard. I made the turrets by wrapping them round cardboard tubes of different sizes, which I wrap in clingfilm first. The roofs are made the same way that I make my paper icing bags with a bit extra trimmed off.

I then cut out loads of blossoms and attached these to the roofs. I cut out windows and door. I covered the two cakes with fondant icing and stacked them. I stuck marshmallows round the edges, piped creepers and attached blossoms. I then attached the turrets using royal icing. I filled them with sweets and lollies before attaching the roofs with a little more royal icing.

I made a sugarpaste cat. I added more sweets and hundreds and thousands to make a path and then sprinkled with glitter. The message was written on an sugarpaste plaque with edible pen. Then the brought Princess was added.
