Coolest Castle Cake

I made this castle cake for my daughter’s first birthday after getting ideas from this site. I knew I wanted to do a three tier cake and didn’t feel like experimenting with cake cones and sugar cones for the towers as many others have done, so I purchased Wilton’s enchanted castle set.

I started a few days ahead preparing plenty of buttercream icing and baking the cakes, and the night before the party I put the whole thing together. Altogether I used 6 boxes of cake mix, making 2 separate layers for each tier with buttercream icing in between them. I iced each tier with pink buttercream and stacked the cakes on top of one another using some dowel rods. This made for a very sturdy cake that I could decorate without worrying about it falling apart.

Next I made a star border around the bottom edge of each tier using purple buttercream icing. Lastly, I placed the door, windows,and towers where I wanted them and did some last minute decorating with whatever purple icing was left. I finished the castle off by sprinkling some coconut which I had dyed green around the outside.

This cake definitely takes some time but is worth every second. I received lots of compliments and the birthday girl enjoyed her first piece of cake!
