Coolest Christmas Dragon

Every year I make a cake for the Christmas centerpiece. Since I love dragons I combined the theme and made a Christmas dragon. Much of the structure is gingerbread cookies. It was really hard to get frosting into all of the nooks and crannies once the cookies were glued into place with royal icing though.

To make the cookies for the dragon I drew a life size vision of what I wanted the dragon to look like. Then I cut out the main pieces of cookie dough to fit those shapes. For the head and legs which needed depth, I cut out the largest piece and then smaller pieces to make them fatter. The tail was just smaller and smaller circles. Since I had leftover circles of cookies I stacked them up and made a Christmas tree.

It was the hardest dessert to get anyone to eat! No one seemed to be able to slay this dragon until 2 year-old Max devoured the tree with no hands top to bottom. Then it was no holds barred!
