Easy Homemade Purple Cinderella Cake

I made this Cinderella cake using 3 boxes of yellow cake mix. I used lower fat directions, substituting the oil with applesauce and using egg whites rather than whole eggs. This made the cakes rise a bit less than normal. I made 2 9 inch round cakes and baked a third cake using an ovenproof Pyrex bowl.

To build this cake I stacked the round cakes on top of each other with a layer of icing in between. I then stacked the bowl cake on top of the rounds with another layer of icing in between. I used a very sharp knife to cut a whole in the top of the cake and inserted a Cinderella doll with the legs removed. I wrapped the bottom of the doll in plastic wrap to keep her clean!

Using regular store-bough whipped icing and Wilton concentrated icing colors I dyed the white icing purple – my 3 years old’s choice! I iced the entire cake and then piped the ruffle and polka dot design with a cake decorating kit and more of the white icing dyed pink.

This was the nicest cake I’ve ever made and it was really easy! Everyone was REALLY impressed! I almost hated to cut it!
