Coolest Coconut Cake

My daughter wanted a coconut cake for her birthday while we were on vacation, so I did my best! She had a hula girl theme and wanted something to go with it-and frankly I’m glad she asked me to do a coconut instead of a hula girl.

I made the cake in an oblong pan, then I cut out a big oval. I made a line with an icing pen for the top of the “open” coconut. I used vanilla frosting on the top and chocolate and vanilla (mixed together to make a lighter looking brown) frosting for the bottom.

I sprinkled the cake with chocolate long sprinkles for the coconut strings and topped with umbrellas and an umbrella straw.

Very spur of the moment cake, but this is a good idea for anyone to really play up quite nicely.
