Cool Homemade Construction Cake With Oreo Dirt

My son loves dump trucks, diggers, etc, so for his 3rd birthday I decided to try a construction cake. The base is a half sheet that I made from store bought mix, but added pudding mix for moisture. The filling was whipped cream and strawberries and the outside was chocolate butter cream.

I bought 3 trucks, plastic trees, candy (chocolate) rocks, and some road signs. I put Oreo cookies in the food processor to make “dirt”. For the mountain I made the same cake in a loaf pan, froze it and carved it. I used the corners that I cut off for the peaks of the mountain and held it together with toothpicks. I dug out a little bit in the center for a tunnel.

I frosted it and put it back in the freezer while I frosted the rest of the cake. I used black frosting in a tube for the road because I could not get my homemade frosting black enough with food coloring. The green was made by Duncan Hines edible “spray paint” frosting that you can buy at the grocery store.

I got a lot of compliments on this cake! And it tasted great! My son loved it!
