These Homemade Cookie Dough - Cookie Monster Cupcakes were fun to make and tasted great! They actually had cookie dough inside them! Yum!

I made these using a yellow cake mix but I have made them before using a chocolate cake mix - I liked the chocolate best! The day before you make your cupcakes mix up a batch of your favorite chocolate chip cookie dough or use the pre-mixed cookie dough from the grocery store. Roll the cookie dough into about 1" balls - place them in a plastic container and put them in the freezer. For one cake mix you will need about 24 balls of cookie dough.

Just mix up your cake mix using which ever flavor you like best. Place your cupcake liners in the cupcake tin and add just a dollop of cake batter. Go ahead and put the dollop in each liner before you take your cookie dough out of the freezer. Place one ball of cookie dough in each cupcake liner then add the rest of the cake batter. The cookie dough ball will be sticking up some in the middle but when the cake rises it will cover the cookie dough. Fill the liner about 2/3 full. Then just pop in the oven and cook per instructions on the box. When you are checking for doneness with a toothpick - check on the side so you will not be sticking it in the cookie dough.

**If you have to bake more than one pan - don't fill the other liners until just before you bake - you want your cookie dough to be frozen.

Before icing use a sharp knife to cut about half way back and put a small piece of wax paper that sticks out. This will allow you to put an actual cookie in Cookie Monster's mouth without messing up your icing. I used buttercream frosting with my small 'grass' tip to make the fur and his eyes are out of fondant with black icing for the dots. Then carefully lift the piece of wax paper and slide in an actual cookie. Not only do they look fun but the cookie dough inside is soft and chewy! I have included a picture that shows the inside of another cookie dough cupcake (not decorated as Cookie Monster) just so you could see what they are like inside.
