Simple Homemade Cupcake Birthday Cake

This cupcake birthday cake was for my daughter’s first birthday. I decided to try out fondant for the first time and was pretty happy with the outcome. I used two 9×2” round cake pans and the Wilton cupcake pan for the top. I used my kitchen aid mixer (with dough hook) to make the fondant – it made it so easy – especially to mix in coloring. (I added the purple in a white fondant after refrigeration and it was much more difficult, but can be done.)

Everything is fondant except the top which was whipped cream icing and large Wilton sprinkles. I am not good at hand lettering with a tip, so the fondant letter cutouts were very helpful to me, though also a little tedious. It takes great with buttercream icing under the fondant and all the lettering and strips of the cupcake were adhered with the help of the icing used as like an adhesive.
