Coolest Homemade Blue Dinosaur Cake

My daughter who was turning 3 wanted a Blue Dinosaur cake for her birthday. I was going to buy a cake pan and decorate it with regular old frosting when I found this web site, and from looking at all the birthday cakes I came up with two different cakes, for the two different birthday parties we were having.

First I found a marshmallow fondant recipe on line, which sounds hard but was very easy to make, color and use. I made it a week in advance to allow the fondant to “set-up”. Fondant is like working with playdough when you get it to the right consistency. Next I colored my fondant with food coloring (use latex gloves so you don’t stain your hands). Plan this out so you have enough fondant for each color you may choose.

This takes a little elbow grease, but just knead it like bread and it will eventually mix evenly. I have bought fondant before and it has tasted terrible, but this fondant is very good to eat. The Kids couldn’t get enough of it.

For the blue dinosaur cake I used a glass mixing bowl for the cake, and made the tail, head, neck and feet out of fondant. I wish I would have used a paper towel roll for the neck so that It would have stood up stronger. First I baked the cake, and let it cool, then I used butter cream frosting as the “glue” for the fondant. Spread a moderate layer all over the cake, and if I would have used the paper towel roll, that too. Roll the Fondant out with a rolling pin, corn starch works well to keep it from sticking, once you have it to the desired size to fit over your cake, roll it onto a rolling pin and put it over your frosted cake. I used a pizza cutter to cut off the excess fondant. If you don’t get any frosting on the extra fondant you can easily re-use it. For the decorations I used set aside fondant that I colored and used cookie cutters for the shapes and flowers, and a garlic press for the grass.

If I do it all over again I will freeze the cakes sealed in several layers of plastic wrap, then cut the cakes and frost while still frozen, it would allow for easier sculpting, and less falling apart for the little pieces of cake.

Once you have the fondant on the cake do not refrigerate, it will make water spots on the fondant, so make sure to decorate one day ahead of time and seal the cake up to set overnight.
