I just used one cake mix, we always have enough with one and I hate throwing out leftovers. I used a 9″ square pan and a smaller circle baking dish. The icing is standard cake icing (1 cup butter, 4 cups icing sugar, 2TB water and 1tsp vanilla). I iced the sides of cakes with white then colored the remaining icing pink for the edges. I filled the top with vanilla pudding and the castle is pink cardstock paper made into a tube and topped with a sugar cone.
The princesses are from the Dollar store (my daughter already had them, I just washed them first). She adored the Disney Princess Castle Cake and it took less than 30 minutes to put it together and decorate it.
