Coolest Dr. Seuss 1st Birthday Cake Design

I volunteered to make a cake for my friend’s twins’ 1st Birthday. The theme for the party was Dr. Seuss’s Cat In The Hat. More specifically, it was Thing 1 and Thing 2 (in honor of the twins).

I made a two layer 9″ french vanilla cake and two matching 4″ smash cakes to go with the main cake.

The characters, polka dots and letters were done in candy melts. To make them, I printed off the reverse image of the characters and letters in the size that I wanted and then used #1 and #2 tips to outline and fill in the chocolate. A toothpick was used to do the finer details. Using the fine tip of the toothpick, I was able to recreate the finest details like the words on the front of Things 1 & 2.

The cakes are covered and decorated with buttercream icing. I continue to use the Wilton recipe as I find it creates the best crust to inset chocolate and allows for smoothing after the fact.

Buttercream Recipe:

* 1/2 cup solid vegetable shortening

* 1/2 cup (1 stick) butter or margarine softened

* 1 teaspoon clear vanilla extract

* 4 cups sifted confectioners’ sugar (approximately 1 lb.)

* 2 tablespoons milk

In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. You can add corn syrup (water or milk) to make the icing thinner and easier for spreading.
