I made this graduation cake for my sister's graduation from college, my daughter's graduation from high school, and my nephew's graduation from Jr. High.

For the hat part, I made round cakes and frosted them black. For the mortars, I melted chocolate candy melts and put them in a square pan, and let it harden in the refrigerator. When they were hard, I took them out and trimmed off the jagged edges.

I made the tassel by softening fondant with shortening, colored the fondant the colors of the schools. Then I put it through a garlic press. I used an unmelted candy melt to be the button on top of the cap. I took black food coloring and painted the chocolate mortar.

I took pictures to a local cake supply store and had them put on sugar paper. I cut those out and put them on the appropriate cake.

But, how did you pull off cutting and serving the chocolate top part?
