Coolest Hello Kitty Birthday Cake

My daughter is a huge Hello Kitty fan so I looked on this site first to get some ideas. None of the children liked fruit cake so I used a dense vanilla sponge recipe which is then pricked with a cocktail stick and a vanilla syrup drizzled over which keeps the sponge moist.

The cake is also made with yogurt which helps stop it drying out. I made two of these in deep square tins then froze them for around an hour whilst I found a picture of Hello Kitty I liked. I then drew the picture onto two pieces of A4 size paper – the head on one, the body on the other, and cut each piece out. I positioned the templates on the semi-frozen cake and traced out the template onto the sponge using a cocktail stick and then I cut the shape out.

I then rolled out marzipan really thin and covered the cake in it. The syrup kept the marzipan stuck to the cake so I didn’t have to use warmed jam. I then left it to dry for 24 hours.

I then covered the cake in 3 layers of white royal icing and covered the messy edges with a pink icing pen. I made the features (eyes, clothes, bow & mouth) with ready-coloured fondant icing, brushing the iced cake with water to help it stick on. I then wrote my daughter’s name on it in writing icing. I didn’t find the icing weighed the cake down at all and everyone said how lovely it was to have a thin layer of marzipan that didn’t overpower the flavour of the cake. My daughter was thrilled with her Hello Kitty Birthday Cake!
