Coolest Hello Kitty Cake

My niece Mandy was turning one and my sister just didn’t have time to make a cake with her busy life style. When she told me she was going to buy a Hello Kitty cake for her birthday, I offered to just do it for her.

Without a Hello Kitty pan and without fondant, I thought this task may fail, but I found an old Elmo pan I had used for my daughter one year and it had the same oval shape as Hello Kitty. So I tried it, and it worked! I simply cut the eyeballs off the Elmo cake, cut them into kitty ear shapes, and used frosting to glue them to the cake. After frosting the entire cake, I used a star tip to cover the top of the cake in one last layer of white frosting, giving it a cleaner look.

I used a black tube of frosting with a writing tip to make the eyes and I used black licorice for the whiskers. I used a yellow frosting tube with a writing tip to create the nose and then traced the entire cake with the yellow to help it stand out from the pan.

For the bow, I used one of my daughter’s stretchy hair bands and placed her flower clip in the middle to make it look like a bow. Even though my niece was only turning one, the cake lit her little face up. To my absolute pleasure, she loved the cake.
