Cool Homemade Herbie the Love Bug Birthday Cake

My Herbie the Love Bug Birthday Cake was based on a recipe in the book Australian Kids’ Birthday Cakes. A double quantity of cake mix was made and put in a 1 x 22cm round tin with the remainder put into a cupcake or muffin tin. I traced a template of the basic Herbie shape out and then laid it over the cake then took the tops off four cupcakes and took out a crescent to attach to the car as mudguards using toothpicks and icing.

The rest of the cupcakes were used to elevate the car and decorate the cake plate. Then I used a palette knife and butter icing (frosting) to cover the car. The stripes are sweet and sour licorice strips. The headlights are mini marshmallows cut in half while Herbie’s number is a half marshmallow and the number is a black icing pen.

The lights are jelly beans and the trim around the windows is licorice strips. The wheels are Oreos. I did a trial cake before attempting this. The final cake took about four hours to make.

My son was over the moon with this for his third birthday. But he keeps finding the photos and wants another one for his fourth birthday (this time with Herbie’s girlfriend from Fully Loaded!)
