Coolest Homemade Barbie Birthday Cake

I made this Homemade Barbie Birthday Cake for my daughter’s third birthday. I used a Duncan Hines eight inch round yellow cake for the bottom layer, which I baked according to the directions on the box. I baked a white Pillsbury cake for the top layer in a medium sized glass Pyrex bowl, which I sprayed generously with cooking spray. I baked this layer at 350 for 35-40 minutes. I used a little over half of a mix, filling the bowl two-thirds full.

After the cakes cooled, I inverted them onto waxed paper. I frosted the top of the eight inch round cake with white buttercream frosting and placed the “dome shaped” cake on top. I took the legs and clothes off the Barbie and carefully placed her in the center of the cake.

For the frosting on the dress, I combined a vanilla pudding mix with one cup of milk. I mixed until combined. Then I added a half teaspoon of vanilla and folded in one container of Cool whip. When combined, I put in the refrigerator for fifteen minutes to let the frosting set. Then I swirled on the frosting to make a “poofy” look for the dress.

For the top of the dress I tinted a small can of vanilla pre-made frosting pink and piped it on using a number eighteen star tip. It was a very light, delicious cake that everyone raved about!
