Coolest Homemade Barbie Princess Birthday Cake

I enjoy making and decorating cakes but until now they have just been plain 7″ cakes with rolled out icing designs. I decided to make my niece a different type of cake for her 3rd birthday and came up with the idea of a Homemade Barbie Princess Birthday Cake.

I started by making two 7″ plain sponge cakes and another plain sponge in a mixing bowl. When they were cool and ready to decorate I cut a hole in the middle of each cake with a biscuit cutter, this hole would be were I placed the doll. I filled inbetween each layer with raspberry jam and butter icing. I then wrapped the doll in cling film to protect her clothes and placed her in the precut hole, when the cake had been eaten my niece had a new, clean doll to play with.

I then covered the whole cake in plain butter icing and placed it in the freezer for 30 minutes so that it was set enough to put another layer on top. I then made another batch of butter icing, this time adding pink food colouring to it. I covered the whole cake again in another layer of icing, this time making swirling patterns with a spatula to make it look like material. I piped on the bodice of the dress and then added a few royal icing flowers and also piped all around the base of the cake to make it look like a hem.

My little niece was so pleased with her cake that I’ve promised to make her another.
