Coolest Horse Birthday Cake Idea

For my daughter’s third birthday, she requested a Horse Birthday Cake Idea. This year we had two birthday parties for her, one with each side of the family. So for the out-of-town birthday cake, I made this Horse cake.

I used two box mixes to make the chocolate cake. They are 9×13 chocolate cakes layered on top of each other with icing in between the layers. The icing is a modified buttercream recipe with creme bouquet flavoring added. I used Wilton gel food coloring to dye the icing each color. The grass was made using Wilton’s grass icing tip. I used short strokes on top to cover the top of the cake. For the sides, I laid it down like ribbon to cover the cake evenly.

I used the small star tip to make little pink flowers that I clustered randomly around the cake. We had bought some plastic fencing from a local craft store to make the corral. The horse cookies are sugar cookies with royal icing I had made in advance. I just pushed them into the cake and used toothpicks as stakes to help prop them up.
