Coolest Horse Cake

I prepared cupcakes and used marshmallow fondant tinted with blue and saved some white for the eyes, then I dabbed food coloring to make the pupils. I used Jiffy Yellow Cake Mix to prepare cup cakes.

I made my fondant with:

1 lbs mini marshmallows

3 tablespoons water

2 lbs powder sugar

1/2 cup store brand shortening (using name band usually has zero trans fat, and you need that trans fat)

2 tablespoons cornstarch

1 tablespoon corn syrup

food coloring

Melt marshmallows and 2 tablespoons of water in a microwave or double boiler: Put the bowl in the microwave for 30 seconds, open microwave and stir, back in microwave for 30 seconds more, open microwave and stir again, and continue doing this until melted. It usually takes about 2 ½ minutes total.

Place 3/4 of the sugar on the top of the of the powdered melted marshmallow mix. Then grease hands and need the mixture like dough. When your ready to roll out fondant use your corn starch as “flour.” Stretch over the cup cakes and decorate. Use corn syrup to stick pieces together.

I love the cupcakes! could you please elaborate a little more on how you made the fondant with the marshmallows when do you add the powdered sugar and the shortening? plus how long did it take you to make them. i would really like to give it a whirl for a b-day party for my daughter, also does the fondant taste good using marshmallows? I’m not really a big fan of the taste of fondant. any help would really be appreciated.
