Coolest Horse Cake

My daughter wanted a horse cake for her 7th birthday. I decided to make an 11×15 “pasture” out of red velvet cake filled with cream cheese frosting. The horse was made with a two layer 9×13 chocolate cake filled with cream cheese frosting, and carved to the shape of a horse’s head. For the horse shape, I used a picture that I found and copied it free hand onto a piece of parchment paper and then used a toothpick to etch the drawing onto the 9×13 cake. Both the pasture and the horse were covered with regular buttercream frosting crumb-coat before decorating.

To get the smooth texture of the frosting on the horse I let the frosting set for about an hour and then I used my fingers dipped in powdered sugar to pat the raised spots and flatten out the frosting. I used black food coloring on a toothpick to make the eye lashes and to outline the eye. The most difficult part of this cake was carving and crumb-coating the horse, but it paid off in the end because my daughter and her friends loved it.
