Coolest Little Mermaid Birthday Cake

I looked everywhere for an easy mermaid cake to make and finally found one but it wasn’t very easy to come by! This Homemade Little Mermaid Birthday Cake took about 5 hours in total to make, from baking to icing.

Using a plain sponge mixture I cooked 12 cupcakes, 2 round sandwich tin cakes and 1 large square tin. I used one of the round sandwich tin cakes for her face. I used the other sandwich tin cake to cut out her arms. I used the large square tin cake for her body and tail. You could do any sponge (chocolate, carrot etc) but this cake was delicious enough with plain sponge and butter cream icing.

I used a big plywood board (4ft by 2ft) covering it with a blue plastic tablecloth for a sea background. I drew out the mermaid on paper before I started. I then traced over the mermaid with baking paper then cut out her body and tail into pieces. I arranged the pieces on the square cake and cut out the shapes. Using tooth picks to hold the cake together I then put the mermaid back together. The cupcakes were for her hair. (pics 1 and 2)

I used home made hummingbird bakery butter cream icing, colouring the mixture along the way with pink and green. I used red for the hair and some rather toxic Betty Crocker ready made icing. I do not recommend using it! I used it only as an emergency and for decorative purposes! (pic 3) I would also recommend doing a crumb layer of icing first as the cake does crumble and show through!

I used piping pens for the scales on the tale and to draw out a bikini top. I filled the bikini top with pink edible glitter. I used the icing pens for her mouth and nose and used white chocolate buttons for her eyes, with icing pens for middle of eyes, eyelashes and cheeks. I finished off by writing on the bottom of the board. (pic 4)
