Cool Homemade Little Mermaid Doll Cake

I have always wanted to create a doll cake so this year I had my chance for my niece’s 5th birthday to make her a Little Mermaid Doll Cake.

I started with three glass mixing bowls that could bake in the oven: small, medium and large and then two butter flavored cake mixes. After the cakes were finished and cooled, I froze them for about 45 minutes and took each cake and carefully cut the top part so that they were more flat and would stack easier. Freezing them allows you to cut them with a lot less crumb mess.

After that I cut each one in half. I put the first layer down (big bowl cake) and then spread strawberry jam lightly over it and then layered the next half. I did this for the remaining cakes. Next, I put a crumb coat of icing on them. I got the recipe for a buttercream icing off of youtube- seriouscakes 4-21-08. This icing was to die for!

After about a day of drying, I tinted the icing to my liking and iced away. I added white Royal icing for the pearls. I went to www.disneyprincess.com for the dress colors and ideas. I was trying for more of a salmon color with the pink. I think for my first time, she turned out really cute.
