Homemade Little Mermaid Pool Party Birthday Cake

My niece was having a pool partly for her 3rd birthday and was way into Ariel so I offered to make a Little Mermaid Pool Party Birthday Cake. I used a box cake recipe but replaced the oil with applesauce as it makes a denser cake and better for carving. Used a marshmallow fondant recipe I found online.

I covered the lower half of the Barbie in plastic wrap, and covered the legs in fondant and added a little edible luster dust for a nice effect on the tail and her top. I iced the cake in standard store bought icing with added coloring and used raw course sugar crystals for the beach sand.

Then made all the other decorations with marshmallow fondant including sculpting Sebastien, Flounder and even added Nemo and a shark fin in the water. It was a big hit, though I wish I had made the cake considerably bigger as it was a large party!
