This Mario Kart cake was a blast to do! I used a 10″ and 8″ cake pan and when I went to carve it out (this being the first time I carved a cake), I messed it up!! I ended up piecing it back together before covering it in fondant. Everything is edible.
I made the cars, mushrooms, and clothing out of candy clay and the figures and trees out of fondant. The tree trunks are candy canes that I covered in fondant. Unfortunately I was unable to keep my husband from seeing the cake before his birthday but my in-laws couldnt believe that I made all the figures and things myself! My 8 year old son asked me why I didnt do this cake for his birthday instead of my husbands! Guess I’ll be figuring out something even more fun for his birthday!! lol
