Coolest Mermaid Birthday Cake

I made this Mermaid Birthday Cake for a friend’s daughter who was turning 6. This cake turned out really nicely, I am very happy with it.

I made two round chocolate mud cakes, one smaller than the other cut Topsy Turvy style (to achieve this, the bottom cake has a groove cut out of it the size of the smaller one so it can slot in and support it, it’s all a trick of the eye).

I coloured Betty Crocker vanilla frosting an aqua colour and spread it on the cake, leaving a slightly wavy finish like waves of water.

I handmade the pieces of the mermaid out of marshmallow fondant the day before and glued her together with tiny dots of water when the cake was done, and painted her with lustre dust to make her sparkle. I also used marshmallow fondant (a homemade recipe) for the star shapes (I used star cutters and gently lifted up the edges to give them a bit of character) and rolled little balls to make a border for the edge of the cake. Bella’s name is made using alphabet cutters and the ‘bubbles’ are silver cachous.

Such a fun cake!!!
