Coolest Mickey Mouse Clubhouse Cake

I was thrilled when my son, now 8 decided he wanted a Homemade Mickey Mouse Clubhouse Cake. Finally! All these years….he wanted one when he turned 8. This was my first time with fondant and really enjoyed it. It wasn’t as hard as I thought, but I decided to make my fondant instead of store bought. Plus it was so much tastier. I used a simple marshmallow fondant, with marshmallows and powdered sugar and a little bit of water. To make the bright red and light blue colors, I added red/light blue candy melts to the melted marshmallows and a tad of red/blue food gel to get the desired color. It turned out great. For the black, I used dark chocolate candy melts with some jet black food gel and made a perfect color black for the Mickey Mouse head and ears.

The bottom layers are 2 8inch stacked, cream cheese icing layer to help fondant stick. The top layers are 2 6 inch stacked. I used wooden dowels and 6inch cardboard piece to keep the top from sinking into the bottom layers. In between the top and bottom were gumballs. I also premade the cutouts for the cake a few days before. This cake took about 15 hours total time, started on a Monday and finished it on Friday. I didn’t bake the cakes until the day before I needed it so it would be fresh. The fondant will keep for awhile as long as it’s in an airtight container…I used plastic wrap, Ziploc bag and then an air tight container so it was triple fresh.

The figurines came from the Disney store. The kids loved it, plus the adults too, had an awesome time doing this cake, hard work, but worth it after seeing the final product! Would definitely work with fondant again after this!
