Coolest Monster Truck Birthday Cake

I wasn’t having any luck finding a pre-made monster truck birthday cake for my son’s 4th birthday so the hubby and I thought “we can do this!” This is my first fondant cake EVER! (Thanks YouTube! LOL)

It’s basically 2 chocolate cake mixes and dyed fondant. My husband made the truck with 2 brownies, one for the body and one cut in half to make the cab and then added Hostess Ding Dongs for wheels. We used small dowels for the axels to attach the wheels and the brownie truck just rested perfectly on top. Just so it was secure enough to move we put a small dowel under the truck so that we could transport it.

I used some cookie cutters to spell out my son’s name and added some cut out stars along the back. Next time I’ll go a little easier on the corn starch when I roll it out, it faded the colors a little and clumped in some areas. But with a little shortening on a Q-tip we cleaned up the extra starch. The kids couldn’t wait to dig in, almost made me cry when they cut it.
