Coolest Princess Barbie Doll Cake

This Homemade Princess Barbie Doll Cake was made for a 4 year old girl named Nikki. I used strawberry and chocolate moist cake with cream cheese filling and butter cream frosting. I placed a hole in the center of three layers of 6” cake and cut the top in dome shape to resemble the skirt. Crumb coated the cake with butter cream frosting and let it set at the refrigerator for 10 minutes.

Once set, I coated a second layer of the butter cream frosting and chilled the cake again for another 10 minutes. Once set, I wrapped half of the doll from the waist down in saran wrap to protect both the doll and the cake and inserted it to the hole. I cut three inches of white fondant and made ruffled fabric for the front part of the skirt and immediately draped pink marshmallow fondant on the cake making sure that it covers all the cake up to the waistline of the doll to make it look like a skirt. The upper body was covered with a tube blouse accented with white band.

To hide the imperfections on the waist where the fondants meet, I wrapped a small belt of fondant around the waist and made a long ribbon as accent. The finished piece was then placed on top of a 9” round cake covered with white fondant. Gumpaste was used to create the letters for the name and for the tablet greeting.
