Coolest Princess Birthday Cake Design

I made this Princess Birthday Cake Design for my granddaughter’s third birthday party. I made a similar one for my daughter 30 years ago, so thought I would have another stab at it. I was pleased with the result.

I made a Victoria sponge mixture in a large Pyrex bowl. When cooled I split it and layered it with jam and butter icing. Then I crumb coated it liberally with buttercream and put it in fridge for a few hours. Then I made a hole in top to accommodate a fashion doll (I removed her legs).

I covered it with white ready rolled fondant icing then on top of that I put a layer of fondant icing which I had coloured pink with gel food colouring. I cut a cross in top of icing and pushed doll into cake.

I cut out all the flowers with a push cutter, left them to air dry and stuck them with water to the dress. I then dusted the skirt with edible glitter dust. The necklace is made from silver balls and stuck with buttercream. My little granddaughter was thrilled with it but she wouldn’t let us cut the cake.
