Coolest Princess Castle Cake

Like many other little girls, my daughter had a princess theme for her 6th birthday party. So what better cake than a castle cake for her party! I got the idea for this cake from this website and just revised it.

For the structure of the cake I used two square cakes for the bottom level (carved round for the corners), two round cakes for the middle level, and a smaller carved round cake for the top layer. I made the towers with Wilton’s doll dress cake pan, but I have seen others use ice cream cones successfully. I iced them and rolled them in purple sprinkles.

Now for the TEDIOUS part. The stones. I really wanted to give it a “real” look while still looking like a fantasy cake. I made each stone, alternating colors by piping (with a large circle tip) rectangles one by one. Then I dipped my finger in confectioner’s sugar to flatten each stone. Once I got the hang of it, it went much faster. Then I topped it off with flags on toothpicks on each tower.

It was a BIG hit at the party and everyone raved about it.
