Coolest Princess Tower Castle Cake

I made this PrincessTower Castle Cake for my daughter’s 18th birthday. I had made a castle when she was four so when she requested one for her 18th I don’t think I realized the amount of work that would go into it. I tiered four sponge cakes, the bottom one was rectangle and the other three circles in decreasing size. The 18 towers were bacofoil tubes cut to size and covered in roll out fondant icing. The turrets and spires were ice cream cones, a whole one stuck in the tube for the turret and the cone snapped off the second and inverted for the spire. Each turret and spire were covered in roll out fondant and then I made 2×9 designs for each spire.

I made the door out of cut out cardboard covered in fondant and left to dry and decorated all the borders with piped royal icing. It was a sight to behold but I would recommend fruit cake rather than sponge as even though I had secured the towers with kebab sticks and iced them into place they all toppled in transit so I had to do some creative scaffolding with cocktail sticks.

All turned out well and she was delighted with her cake. This is the sixth cake I have ever decorated in my life so if I can do it anyone can. It was 18 inches high by the way. I hope it inspires you.
