Homemade Rainbow Cake

This Rainbow Cake is a French vanilla layered cake filled with French vanilla pudding and iced with a homemade vanilla butter cream using 1/2 butter & 1/2 shortening. I added a tiny bit of Wilton's royal blue to make it the sky coloring. It's important to ice your cake using thin consistency icing.

To make your base smooth - ice your cake and smooth it with your spatula. Let the cake sit 10-15 minutes (do not let it sit longer) to harden just a little. Take Viva brand paper towels (no patterns) and lay it on top of the cake. Rub gently with your hand, and you'll get a smooth base.

To decorate use medium consistency icing colored in whatever color you want. I used Wilton's golden yellow mixed with lemon yellow, no-taste red, violet, leaf green mixed with Kelly green. Just add as much as you want to get the color you like. The key with the red is that I almost had to use the whole 1 oz jar. Also let it sit overnight, because the color will be a truer red.

I used the piping gel to trace the rainbow pattern onto wax paper. I transferred the design onto the cake. I outlined my rainbow with the colors I wanted using the #3 tip. I then filled it in with the stars using tip #16.

To make the clouds, I use the zig zag pattern. The larger bottom part is the #21 tip and the smaller one was made by the #16 tip. I used the #21 tip to make the bottom star border and the #3 tip was used to make the small dots of colors on the border.

Rainbow cake

Nice job. Looks great. I just made this cake last week in the course 1 Wilton cake class. It was so much fun. Yours looks better than mine did.
