Homemade Rainbow Unicorn Birthday Cake
My youngest daughter was turning 5 and wanted to have a unicorn birthday party. I love baking and using different ideas and recipes. I asked her if we could add the "rainbow" part because I knew we could do some really cool stuff with color! I looked online for all the unicorn cake or rainbow cake ideas I could find. I remembered that I had a Wilton horse cake pan. I thought I could find someway to make it a Homemade Rainbow Unicorn Birthday Cake.
I was having lunch at Cracker Barrel and saw these unicorn lollipops. The lightbulb went off! I would make the horse cake using the pan and add the unicorn pop for the horn. The cake was chocolate and I made my own icing using a wonderful buttercream recipe. The icing is flavored with vanilla and almond extracts. I tinted the icing all the rainbow colors and voila! Rainbow Unicorn Cake! I loved it and more importantly, my daughter loved it!
