Coolest Rainbow Unicorn Birthday Cake

My youngest daughter was turning 5 and wanted to have a unicorn birthday party. I love baking and using different ideas and recipes. I asked her if we could add the “rainbow” part because I knew we could do some really cool stuff with color! I looked online for all the unicorn cake or rainbow cake ideas I could find. I remembered that I had a Wilton horse cake pan. I thought I could find someway to make it a Homemade Rainbow Unicorn Birthday Cake.

I was having lunch at Cracker Barrel and saw these unicorn lollipops. The lightbulb went off! I would make the horse cake using the pan and add the unicorn pop for the horn. The cake was chocolate and I made my own icing using a wonderful buttercream recipe. The icing is flavored with vanilla and almond extracts. I tinted the icing all the rainbow colors and voila! Rainbow Unicorn Cake! I loved it and more importantly, my daughter loved it!

  4. Thank you for your kind words. This party was a lot of fun! We had rainbow everything. Gummies, M&Ms, Twizzlers, gum balls, cupcakes and cake pops. The kids loved it!

  5. this is amazing! do you have to use the unicorn lollypops? and is there anyway you can make one laying down or sitting up? this cake looks rainbowlicious!!!!

    You do not have to use the unicorn lollipop, I just thought it was perfect for this project. Wilton makes a 3-d lamb pan that can be used to make a sitting unicorn. Go to Wilton.com and search unicorn cake. There are several blogs about how to do this.
