Coolest Rapunzel Castle Birthday Cake

I made this Rapunzel Castle Birthday Cake for my 5 year old who wanted a Rapunzel cake. It’s white cake with strawberry and Bavarian creme filling, covered in white chocolate icing and then colored pink fondant on top. The towers are from the Wilton castle kit. I put icing and sugar covered waffle cones on top instead of the plastic ones that came with the Wilton kit.

I made about 300 royal icing flowers a week before to have for decoration. I made a few royal icing leafs as well but ended up not using them as I had a lot of white chocolate icing left. I colored the left over icing green and piped the greenery with that. It was my first time working with fondant and I honestly found it hard to roll it out thin enough and get it on the cake without breaking and to get it looking smooth. It came out decent in the end as I was able to cover the flaws with icing and flowers.

The towers on the top tier was also wobbly so I drilled holes in the bottom and inserted wooden skewers to get the towers stable as the cake had to be transported. I spent 5 hours the night before assembling everything, then another 2 the morning of, adding the top tier towers and finalizing the greenery climbing up on the back of the cake as that’s where most mistakes where visible.

My girl’s first look at the cake was priceless and so worth the effort that went into it.

  4. Pam – I e-mailed you but here’s the information just in case the e-mail does not come through.

    I used a 12 inch foil covered base, the bottom layer is one 10 inch cake and the top tier are two 6 inch rounds ( making it four layers) and the reason I used two 6 inch cakes was to make it high enough to fit the door. The flowers i made with royal icing, see recipe below. I used a drop flower decorating tip and just piped out the flowers. For the center of the flower you can either use round colored edible pearls or you can use a round decorating tip. I piped out all the flowers late one night onto wax paper and then let them lay flat and dry overnight. Once dry I just peeled them off the paper and put them in a tupperware bowl with a lid until ready to use. All the supplies can be found at Michael’s or Joann’s and there are always coupons for 40 or 50% off that can be found online.

    Royal Icing
    3 tablespoons Meringue Powder
    4 cups (about 1 lb.) confectioners’ sugar
    6 tablespoons warm water
    Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer). Keep all utensils completely grease-free for proper icing consistency. For stiffer icing, use 1 tablespoon less water.

  6. Here’s everything you need to know to make the cake:

    Purchase:
    12″ Round base or make your own from thick foil covered cardboard)
    10″ cake pan (bake one)
    6″ cake pan (bake two)
    12 oz package of fondant
    green and red food coloring (green for leaves, red to make fondant and flowers pink)
    fondant smoother (crucial!)
    Wilton castle set
    mini princess dolls of choice (at Disney store, walmart, target etc)
    sugar cones
    colored sugar (to make castle turrets sparkle)
    edible pearls (center of flowers)
    2 boxes of cake mix
    strawberry preserves (or other preserve of choice)
    Bavarian creme (or use jello vanilla pudding)
    meringue powder
    confectioners sugar
    Crisco (to use with fondant)
    Icing (or make your own white chocolate buttercream see recipe below)
    drop flower piping tip
    small round tip (if you do not want the edible pearls for flower center)
    leaf tip
    disposable piping bags

    Buttercream recipe:
    18 ounces (3 6 ounce pkgs) white baking chocolate coarsely chopped
    1/4 cup milk
    1 cup solid vegetable shortening
    1 cup butter or margarine
    2 teaspoons pure vanilla extract
    8 cups confectioners’ sugar
    1/4 cup milk
    1. Microwave chocolate with 1/4 cup milk in microwavable bowl on Medium-high for 1-2 minutes; stir chocolate halfway during cooking time. Do not overheat. Chocolate will continue to melt while being stirred.
    2. Cream butter and shortening with electric mixer. Add vanilla.
    3. Gradually add sugar, one cup at time, beating well on medium speed. Scrape sides and bottom of bowl often.
    4. When all sugar has been mixed in, icing will appear dry.
    5. Add milk and beat at medium, speed until light and fluffy.
    6. Beat in chocolate.
    Keep icing covered with a damp cloth until ready to use.

    Pipe out the flowers ahead of time considering it takes about 12 hours to completely dry. I made about 300 flowers but had PLENTY left over. See recipe for royal icing in previous post above. Bake the cakes ahead of time to allow to cool. Bake one 10′ and two 6′. Divide each cake. Make buttercream icing just right before starting the assembly ’cause I found it hard to use the icing once it had cooled. You want it just warm, not too hot cause it will be runny. Ice the sugarcones with pink icing and roll in pink sugar. I let it dry overnight in the fridge. I also used the royal icing to outline the doors and windows and then pressing into the colored sugar.

  7. Put bottom layer of 10′ on foil covered base, pipe a pudding wall around the edges to avoid the preserves to run out. Spread thin layer of preserves, spread thin layer of pudding on top. Add other 10′ layer. Crumb coat cake with the buttercream icing. Color fondant and roll out onto Crisco covered work area. If you have the fondant roll out mat, use that instead and I don’t believe you need the Crisco w the mat. I used Crisco ’cause the fondant stuck to the work area. Cover 10′ with the fondant. Cut around cake to remove any excess. Place 6′ layer on top of the 10′ and repeat all steps you just did for the 10′.

    Put some buttercream icing under the towers before putting around the cake. The towers on the top tier I drilled a hole into and used thin bbq wooden skewers to stabilize and keep straight. They do sell dowels for this purpose though. Color the remaining buttercream icing green and use to pipe the greenery. Make some more royal icing and color pink to use for decorating the towers, fasten the flowers on the turrets, etc. Use the green icing to cover any flaws in the fondant. My fondant was not smooth in the back so I had lots of greenery climb up onto the towers. Decorate away with flowers and put your princesses on. I stored the cake in the fridge overnight.   10. My granddaughter who will be 5 on April 10th, wants this cake for her birthday. I am going to make it for her, could you tell me what you used for the doors and windows? Did you attach the flowers to the towers before you put them on the cake or after the towers were on the cake. Also what figure is to the left of the door?

  11. Doors and windows come in the Wilton castle set. I found the figures at the Disney store if anyone is looking for them.
