Coolest Snoopy Cake

This Snoopy cake was made for my daughter’s birthday party. Snoopy is made of an entire batch of Rice Crispies treats and covered with white fondant. Snoopy’s eyes, nose and collar are also made of fondant that was colored black using black Wilton food coloring paste.

The actual cake is made up of two layers of Betty Crocker Super Moist chocolate mix and two layers of Betty Crocker Super Moist yellow cake mix. It took two boxes of the chocolate mix and one box of the yellow mix. The frosting between the layers is Betty Crocker butter cream. The outside of the cake is pink colored whipped topping.

To make the fondant you will need:

1 Tablespoon of unflavored gelatin

1/4 cup of cold water

1 teaspoon of almond extract or vanilla extract

1/2 cup of corn syrup

1 Tablespoon of glycerin

2 pounds of confectioners sugars

1/2 teaspoon of white vegetable shortening

Sprinkle the gelatin over the cold water in a small microwavable bowl. Let it rest for two minutes to soften. Place the bowl in a microwave for thirty seconds on high, until the gelatin dissolves. Add the flavoring, corn syrup and the glycerin and stir until the mixture is smooth. Sift 1 1/2 pounds of the sugar into a large bowl. Pour the liquid into the sugar. Stir with a wooden spoon until the mixture becomes sticky. Sift some of the remaining sugar onto a smooth work surface and add the remaining sugar . Knead the fondant until a pliable mass is formed. Adding more sugar as needed. Rub the vegetable shortening on your fingers and knead into the fondant. Wrap the fondant in plastic wrap and place it in a tightly sealed container.

Note: Glycerin can be purchased at a drug store.
