Coolest Surfing Birthday Cake

The girls wanted a birthday cake they could help make. So when we saw this idea of a Surfing Birthday Cake in a book, we knew it was the perfect candidate. And we love how it turned out. It is our favorite cake yet!

We used pre-made blue fondant: 1.5 lbs for the cake and another 1.5 lbs to cover the 12-inch square board. The waves were made with a total of 1.5 lbs white fondant. Decorations were made with various other colors of fondant and affixed to the cake with piping gel, which makes a perfect glue. Drink umbrellas complete the look.

The main cake is a 10-inch round. Inside, ours was a white cake with buttercream icing. I strongly recommend a more dense recipe so the wave will hold its shape better. The surfer girl sits on a bamboo skewer that was inserted through the entire cake, both wave and round. This helps add stability.
