I made this Homemade Tangled Birthday Cake for my friend's daughter. They provided me with the Barbie doll and left the rest up to me. First I sketched how I wanted the cake to look. I copied the top of the dress and decided where I will use lavender fondant, and where buttercream will be used. For the bottom of the dress, I used two shades of lavender fondant and two shades of piping gel with edible glitter.
I went online to find some inspiration. I found a Disney toy using a rabbit, a squirrel, and raccoon braiding her hair. I sculpted the figures out of white fondant. I used toothpicks to hold the head and body together and smaller pieces of toothpicks to hold the tails to the head and body. ALWAYS BE SURE YOU TELL THEM ABOUT THE TOOTHPICKS. THEY CAN EAT THEM BUT FIRST THE TOOTHPICKS MUST BE REMOVED. I applied airbrush paint with a small paint brush to the figurines and was very pleased with the results. I made these two days in advance.
I used two box of white cake mix and baked them in a doll base. I allow it to cool and then I cut down into the top to insert Barbie. I used a generous crumb coat and place it in the refrigerator. (Without the Doll).
I colored two shades of lavender fondant. The lightest lavender was rolled in a triangle shape and placed on the cake. I applied a second coat of buttercream icing and applied the medium lavender fondant. I used a small sharp knife to reveal the inset of the dress (light lavender).
The top of Barbie’s dress was medium lavender fondant. The sleeves are fondant. I used a small tool to mark the gathered sleeves and to mark where to apply the pink butter cream on the sleeves and the front of the bodice. I also applied white butter cream at the end of the sleeves to replicate the lace on the dress.
I wrapped Babie’s body in saran wrap and inserted it into the cake. I then roped her hair. I mixed two separate shades of glitter with piping gel and piped the inset of the dress.
I had baked a fourteen inch round chocolate cake and crumb coated it. I took it from the refrigerator and covered it in green butter cream icing. Next, I placed my finished Barbie on the cake. Then I inserted the candles and positioned the animals. I used the grass tip randomly on the top of the cake and added small pink star flowers. I built up the icing between the animals’ paws and added star flowers to make bouquets.
The top border of the cake was accomplished with a leaf tip and lavender buttercream. For the bottom border, I used the grass tip and more small pink star flowers. I, also, positioned the squirrel on the board and surrounded him with grass, star flowers, and added a bouquet.
This was my first fondant cake and I am very happy with it.
