I made this Homemade Topsy Turvy Dora Cake for my grand daughter’s 3rd birthday and it was my first attempt at a Topsy Turvy cake. I love the way it turned out and would only change the slope of the bottom cake if I could. I have seen these cakes on the internet and thought it would be perfect.
I used 3 10″ cakes for the bottom and 3 6″ cakes for the top. The bottom cakes are Devils food with strawberry filling and the top are butter yellow with chocolate filling. (I learned a cool trick for filling cake, make a damn around the edge of the cake with icing and then fill it in with the filling. It keeps the filling from squishing out!)
I used all buttercream frosting as I have attempted fondant with no success in the past. Plus, I don’t think it tastes good. I had considered using fondant for the decorations but wasn’t sure it would work. I did my crumb cover and placed them in the fridge after stacking. I had seen video how to’s but none showed exactly where to start the cut for the slope. I found out with the top that you should not cut the cake in half, but the slope should still leave the bottom of the cake whole. That is why my bottom layer is not as well sloped as the top.
The other big issue for me was setting the top layer in the bottom part. It is big and awkward and has to already be iced. I had to get help with that part. I made the wires with 18 gauge wire and hot glued the little fuzzy colored balls to the ends. The flowers and little dinosaurs were premade and I wish I had bought more because I wasn’t crazy about my circles. The good thing about these cakes is that the imperfections are OK and they kind of blend. The bad part this cake takes a lot of work. But I think she is going to love it!
